Black Bean Salad

Salad Ingredients

black beans, drained and rinsed

fresh cilantro, chopped

ripe avocado, pit removed and sliced
Instructions
- In a large bowl, combine lime juice, lime zest, olive oil, cumin, cayenne pepper (if using), and ½ teaspoon of salt. Stir to mix.
- Add diced red onion, bell pepper, cherry tomatoes, corn, black beans, and cilantro to the dressing. Toss well.
- Taste the salad and adjust seasoning with additional salt as needed.
- If serving immediately, top with sliced avocado. If making ahead, add avocado just before serving to prevent browning.
- Store in an airtight container in the fridge for up to 5 days.
