Ingredients

  • 2 cups corn
  • 2 cups cooked black beans, drained and rinsed
  • ½ cup bell pepper, diced
  • 2 tablespoons diced jalapeños
  • 1 cup tomatoes, diced
  • ¼ cup red onions, diced
  • ¼ cup parsley, chopped
  • 1 teaspoon cumin powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • pinch salt
  • Juice of 2 limes
  • 1 cup avocado, diced

Instructions

  1. Combine all the ingredients in a bowl and toss them together.
  2. Let the salad sit for about 30 minutes to enhance the flavors, if possible.
  3. Serve immediately with tortilla chips or as desired.
