Pan-Roasted Chicken with Bacon and Apples

Ingredients

The chicken

  • 6 pieces chicken thighs

The seasoning

  • 1 teaspoon finely ground sea salt
  • ¼ teaspoon ground black pepper

The liquid

  • 1 cup white wine

The herbs

  • 4 sprigs fresh thyme

The bacon

  • ½ pound bacon

The vegetables

  • 1 cup sliced shallots
  • 1 piece apple

Instructions

  1. Preheat the oven to 450°F.
  2. Season the chicken with salt on both sides.
  3. Sear the chicken skin side down in a hot skillet for 4-5 minutes until browned.
  4. Flip the chicken and cook for another 2 minutes.
  5. Pour in the wine and add thyme, then transfer the skillet to the oven and roast for 15 minutes.
  6. While the chicken roasts, cut the bacon into pieces and cook in a skillet until crisp.
  7. Remove the bacon and sauté shallots and apple in the bacon drippings until softened.
  8. Stir in half of the crispy bacon bits into the shallot and apple mixture.
  9. After 15 minutes, add the apple and bacon mixture to the chicken and roast for another 10-15 minutes until the chicken is cooked through.
  10. Sprinkle the remaining bacon bits on top and serve immediately.
