Instructions
- Preheat the oven to 350°F and prepare a muffin tin with liners.
- Sift together flour, cocoa powder, baking soda, and salt in a bowl.
- In another bowl, beat granulated sugar, brown sugar, and butter until fluffy.
- Add the egg and vanilla, mixing until combined.
- Alternate adding the flour mixture with water and buttermilk, mixing until just combined.
- Divide the batter into the muffin cups and bake for 15-20 minutes.
- Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack.
- Prepare the vanilla creme filling and fill the cupcakes using a pastry bag or knife method.
- For the ganache, combine chocolate and melted butter in a bowl.
- Heat the cream until simmering and pour over the chocolate, let sit, then stir until smooth.
- Spread the ganache over the filled cupcakes and let it cool until set.
