Simple Coconut Mango Chicken and Broccoli Curry

Instructions
- Melt the ghee in a large skillet over medium heat and add the onion, cooking until golden.
- Add the chicken, curry powder, cayenne, salt, and pepper, cooking until the chicken is browned.
- Stir in the garlic and ginger, then add the zucchini and summer squash, cooking for an additional 2 minutes.
- Pour in the coconut milk and add the broccoli, bringing the mixture to a simmer for about 10 minutes.
- Remove from heat and stir in cilantro, mango, lime juice, and zest.
- Serve the curry over rice with fresh naan and top with cashews.
