Mango Chicken

mango, peeled and diced
Instructions
- Warm oil in a large sauté pan over medium heat.
- Add onions and cook until soft, about 5-10 minutes.
- Stir in red pepper, ginger, garlic, curry, and salt, and cook for 5 minutes.
- Add vinegar, water, coconut milk, and mango to the pan, bringing it to a brief boil before reducing the heat.
- Add chicken pieces and return to a low simmer.
- Cook for 8-10 minutes until chicken is cooked through, checking the largest piece to ensure it is done.
- Garnish with cilantro and serve.
