Ingredients

The chicken and vegetables

  • pounds chicken breast, cut into 1-inch cubes
  • 1 large onion
  • 1 each red bell pepper, diced
  • 2 cloves garlic, sliced
  • 1 tablespoon fresh ginger, minced

The sauce

  • ¼ cup grapeseed oil or olive oil
  • 1 teaspoon curry powder
  • 1 teaspoon celtic sea salt
  • 1 tablespoon apple cider vinegar
  • 1 cup water
  • ½ cup full fat coconut milk
  • 1 each mango, peeled and diced

Instructions

  1. Warm oil in a large sauté pan over medium heat.
  2. Add onions and cook until soft, about 5-10 minutes.
  3. Stir in red pepper, ginger, garlic, curry, and salt, and cook for 5 minutes.
  4. Add vinegar, water, coconut milk, and mango to the pan, bringing it to a brief boil before reducing the heat.
  5. Add chicken pieces and return to a low simmer.
  6. Cook for 8-10 minutes until chicken is cooked through, checking the largest piece to ensure it is done.
  7. Garnish with cilantro and serve.
