Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound boneless skinless chicken breasts, cut into 1 inch pieces

  • 1 green bell pepper cored, seeded and thinly sliced
  • 1 red bell pepper cored, seeded and thinly sliced
  • 1 teaspoon minced garlic
  • 2 teaspoons minced ginger
  • cup chicken broth
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 ½ cups fresh mango chunks

Instructions

  1. Heat the vegetable oil in a large pan over medium-high heat.
  2. Add the chicken to the pan in a single layer, seasoning with salt and pepper, and cook until browned and cooked through.
  3. Remove the chicken and add the bell peppers to the pan, cooking until softened.
  4. Add the minced garlic and ginger to the pan and cook for 1 minute.
  5. In a small bowl, whisk together the chicken broth, sugar, soy sauce, rice vinegar, and cornstarch.
  6. Pour the mixture over the chicken and vegetables, bringing it to a simmer.
  7. Cook until the sauce has thickened slightly, then stir in the mango chunks and serve.
