Spicy Mango and Coconut Chicken

Ingredients

The chicken and vegetables

  • 1 piece boneless skinless chicken breast, cut into 1" cubes
  • 1 small onion, chopped
  • 1 small yellow mango, peeled and cut into 1" cubes
  • ½ piece red bell pepper, cut into large chunks
  • 1 tbsp green onion, chopped (save a few pieces to garnish)

The liquids and seasonings

  • 40 g fresh coconut shavings, save a few to garnish
  • 2 tbsp full fat coconut milk
  • ½ cup young coconut water
  • 2 tbsp white wine vinegar
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp unpasteurized liquid honey
  • ½ tsp sambal oelek

Instructions

  1. 1. Coat a skillet with cooking spray and heat over medium-high heat.
  2. 2. Add chicken to the hot pan, season with salt and pepper, and cook for about 5 minutes until golden brown.
  3. 3. Turn the chicken pieces to cook the other side.
  4. 4. Add onion and red pepper, stir, and cook for 2-3 minutes.
  5. 5. Add the remaining ingredients, stir, and continue cooking for an additional minute or two.
  6. 6. Transfer to a serving bowl and garnish with green onions and coconut shavings.
