Spicy Mango and Coconut Chicken

Instructions
- 1. Coat a skillet with cooking spray and heat over medium-high heat.
- 2. Add chicken to the hot pan, season with salt and pepper, and cook for about 5 minutes until golden brown.
- 3. Turn the chicken pieces to cook the other side.
- 4. Add onion and red pepper, stir, and cook for 2-3 minutes.
- 5. Add the remaining ingredients, stir, and continue cooking for an additional minute or two.
- 6. Transfer to a serving bowl and garnish with green onions and coconut shavings.
