Instructions
- In a large saucepan, combine chicken broth, onion, salt, and pepper, and bring to a simmer.
- Add the chopped broccoli to the pot and cover, cooking for 8-9 minutes until tender.
- Blend the milk and flour until smooth, then slowly add to the soup while stirring constantly.
- Bring the mixture back to a gentle simmer and cook until thickened, about 3-4 minutes.
- Turn off the heat and stir in the cheese gradually, allowing each handful to melt before adding more.
- Serve immediately, noting that the soup will thicken as it cools.
