Ingredients

The soup base

  • 3 ½ cups chicken broth
  • ½ cup finely diced onion
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 5-6 cups chopped fresh broccoli
  • 4 cups milk
  • ½ cup all-purpose flour

The cheese

  • 3 cups freshly grated cheddar cheese
  • 1 cup freshly grated Swiss cheese

Instructions

  1. In a large saucepan, combine chicken broth, onion, salt, and pepper, and bring to a simmer.
  2. Add the chopped broccoli to the pot and cover, cooking for 8-9 minutes until tender.
  3. Blend the milk and flour until smooth, then slowly add to the soup while stirring constantly.
  4. Bring the mixture back to a gentle simmer and cook until thickened, about 3-4 minutes.
  5. Turn off the heat and stir in the cheese gradually, allowing each handful to melt before adding more.
  6. Serve immediately, noting that the soup will thicken as it cools.
