Ingredients

The pizza crust

  • 1 ¾ cups whole wheat pastry flour
  • 1 teaspoon baking powder
  • ½ teaspoon coarse salt
  • 1 ½ cups plain Greek yogurt
  • 1-2 tablespoons olive oil

The pizza toppings

  • 4 ounces boursin cheese (with herbs)
  • 3-4 medium heirloom tomatoes, cored and thinly sliced
  • to taste coarse salt
  • to taste freshly cracked black pepper
  • 4-5 sprigs fresh thyme, stems removed

Instructions

  1. Preheat the oven to 425°F.
  2. Mix flour, baking powder, salt, and Greek yogurt in a large bowl until a dough forms.
  3. Transfer the dough to a baking sheet or pizza stone, press into a ¼-inch thick round, and brush with olive oil.
  4. Bake the crust for 5-7 minutes and then remove from the oven.
  5. Add clumps of boursin cheese on the crust, top with tomato slices, and sprinkle with salt and pepper.
  6. Bake for an additional 10-12 minutes, then switch the oven to low broil.
  7. Broil for 3-4 minutes until the cheese is browned and bubbly.
  8. Let cool slightly, slice into wedges, and top with fresh thyme leaves.
