Ingredients

The chicken filling

  • lbs boneless skinless chicken breasts
  • 2 tsp ancho chili powder
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 clove garlic, minced
  • 1 cup fire roasted jarred salsa
  • 2 Tbsp chopped cilantro

For serving

  • 10 pieces corn or flour tortilla shells, warmed
  • to taste shredded cheese
  • to taste shredded lettuce
  • to taste diced tomatoes
  • to taste guacamole or diced avocados
  • to taste sour cream
  • to taste hot sauce

Instructions

  1. Place chicken in the Instant Pot or slow cooker.
  2. Mix the spices together in a bowl.
  3. Sprinkle the spice mixture and garlic over the chicken, then pour salsa over to cover.
  4. Cook for 13 minutes in the Instant Pot or 5-6 hours in the slow cooker.
  5. After cooking, let the chicken cool briefly, then shred it and return it to the salsa mixture.
  6. Add chopped cilantro and toss to combine.
  7. Serve the salsa chicken in warmed tortillas with desired toppings.
