Ingredients

  • 2 tbs olive oil
  • 2 lbs stew beef, cut into bite-sized pieces and sprinkled with salt
  • 1 medium onion, chopped
  • ½ cup tomato sauce
  • 2 tbs balsamic vinegar
  • 2 cups water
  • 2 lbs potatoes, peeled and cut into one-inch cubes
  • 1 lb carrots, cut into bite-sized pieces
  • 3 stalks celery, cut into bite-sized pieces
  • 1 tsp salt
  • ¼ tsp pepper

Instructions

  1. 1. Set the Instant Pot to Saute and add the olive oil.
  2. 2. Brown the beef in two batches for 2 to 3 minutes, then set aside.
  3. 3. Turn off the Instant Pot and add the chopped onion, cooking for a minute.
  4. 4. Add the browned beef and all remaining ingredients to the pot.
  5. 5. Close the lid, set the seal, and cook on high pressure for 35 minutes.
  6. 6. After cooking, allow for a natural pressure release for about 30 minutes.
  7. 7. Serve warm.
