Instant Pot Beef Stew

Instructions
- 1. Heat the Instant Pot on the Saute setting and add olive oil.
- 2. Brown half of the beef stew meat, seasoning with salt and pepper, for 3-4 minutes on each side, then remove from the pot.
- 3. Repeat the browning process with the remaining meat.
- 4. Add all the browned meat back into the pot along with onion, garlic, potatoes, carrots, beef broth, tomato paste, thyme, bay leaf, and additional salt and pepper.
- 5. Stir to combine, seal the pot, and set to Manual High Pressure for 30 minutes.
- 6. Once done, carefully vent the pressure or allow it to release manually.
- 7. Remove ⅓ cup of liquid from the pot, whisk in flour until smooth, then return it to the pot.
- 8. Switch back to the Saute function, add peas, and simmer for 3-5 minutes until thickened.
- 9. Sprinkle with parsley and serve.
