Instant Pot Beef Stew

Ingredients

  • 2 ½ pounds beef stew meat
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 teaspoons minced garlic
  • 1 pound small yellow potatoes
  • 4 carrots peeled, halved and cut into 1 inch pieces
  • 3 cups beef broth
  • 3 tablespoons tomato paste
  • 1 teaspoon dried thyme leaves
  • 1 bay leaf
  • 1 cup frozen peas
  • 3 tablespoons flour
  • 2 tablespoons chopped parsley
  • to taste salt and pepper

Instructions

  1. 1. Heat the Instant Pot on the Saute setting and add olive oil.
  2. 2. Brown half of the beef stew meat, seasoning with salt and pepper, for 3-4 minutes on each side, then remove from the pot.
  3. 3. Repeat the browning process with the remaining meat.
  4. 4. Add all the browned meat back into the pot along with onion, garlic, potatoes, carrots, beef broth, tomato paste, thyme, bay leaf, and additional salt and pepper.
  5. 5. Stir to combine, seal the pot, and set to Manual High Pressure for 30 minutes.
  6. 6. Once done, carefully vent the pressure or allow it to release manually.
  7. 7. Remove ⅓ cup of liquid from the pot, whisk in flour until smooth, then return it to the pot.
  8. 8. Switch back to the Saute function, add peas, and simmer for 3-5 minutes until thickened.
  9. 9. Sprinkle with parsley and serve.
