Corn Dip

Ingredients

  • 5 ears fresh corn
  • ½ cup thick whole milk Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons fresh lime juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon sea salt
  • 3 scallions chopped
  • 1 jalapeño pepper diced
  • 1 tablespoon crumbled Cotija cheese
  • to taste hot sauce, chili powder, and/or cayenne
  • to taste fresh cilantro leaves
  • for serving tortilla chips

Instructions

  1. Grill the corn and slice the kernels off the cobs to cool.
  2. In a large bowl, mix Greek yogurt, mayonnaise, lime juice, garlic powder, onion powder, and salt.
  3. Reserve some corn, scallions, and jalapeño for topping, then add the remaining ingredients to the bowl and stir to coat.
  4. Chill the mixture for at least 1 hour.
  5. Spread the chilled corn dip in a shallow dish and top with reserved ingredients, cheese, and hot sauce if desired.
  6. Garnish with cilantro and serve with tortilla chips.
