Corn and Cotija Cheese Dip

Ingredients

  • 2 Tbsp olive oil
  • 3 cups fresh corn
  • 1 medium shallot
  • 1 clove garlic
  • ½ cup light sour cream or plain Greek yogurt
  • 4 ounces 1/3-fat cream cheese
  • 1 cup grated cotija cheese
  • ¼ tsp sea salt
  • ¼ tsp ground black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a cast iron or oven-safe skillet over medium heat and add half of the olive oil along with the shallot and garlic, stirring constantly.
  3. Add the corn, sea salt, and pepper, and cook for about 5 minutes until the shallots are softened and the corn is slightly darker.
  4. In a large bowl, mix together the sour cream, cream cheese, and cotija cheese until well combined.
  5. Add the corn mixture to the bowl and stir until everything is well mixed.
  6. Grease the cast iron skillet with the remaining olive oil, then spoon the dip back into the skillet.
  7. Bake for 11-13 minutes or until hot and bubbly.
  8. Serve with veggies, tortilla chips, crackers, or baguette.
