Greek Cauliflower Salad Bowls

Ingredients

  • 1 head cauliflower
  • 1–2 Tablespoons olive oil
  • ½ teaspoon minced garlic
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground black pepper
  • ¼ cup pumpkin seeds
  • 1 cup grape leaves
  • 1 cup cherry tomatoes
  • ¼ cup chopped fresh herbs (basil, parsley, or cilantro)
  • 5–7 pieces marinated green olives
  • ½ lemon juiced
  • 1 ounce crumbled goat cheese

Instructions

  1. Remove the stem from the cauliflower and cut it into sections, then process in a food processor to create cauliflower rice.
  2. In a large bowl, combine the cauliflower rice with olive oil, garlic, salt, pepper, and pumpkin seeds.
  3. For a fresh salad, mix in chopped grape leaves and diced tomatoes, or lightly toast the cauliflower rice in the oven for added flavor.
  4. Rinse and prepare the grape leaves by removing excess salt and water, then chop them.
  5. Add the grape leaves, diced tomatoes, herbs, and olives to the cauliflower mixture and toss well.
  6. Finish with a squeeze of lemon, additional salt and pepper, and garnish with goat cheese and herbs.
