Greek Cauliflower Salad Bowls

Instructions
- Remove the stem from the cauliflower and cut it into sections, then process in a food processor to create cauliflower rice.
- In a large bowl, combine the cauliflower rice with olive oil, garlic, salt, pepper, and pumpkin seeds.
- For a fresh salad, mix in chopped grape leaves and diced tomatoes, or lightly toast the cauliflower rice in the oven for added flavor.
- Rinse and prepare the grape leaves by removing excess salt and water, then chop them.
- Add the grape leaves, diced tomatoes, herbs, and olives to the cauliflower mixture and toss well.
- Finish with a squeeze of lemon, additional salt and pepper, and garnish with goat cheese and herbs.
