Cauliflower Salad

Ingredients

The salad base

  • 1 head cauliflower
  • 6 ounces grape tomatoes
  • 8 ounces smoked gouda cheese
  • ½ cup basil

The dressing

  • ½ cup mayonnaise or plain Greek yogurt
  • 2 tablespoons heavy cream or quinoa cream
  • 2 tablespoons vegetable broth or chicken broth
  • 3 tablespoons apple cider vinegar
  • 1 chipotle chile pepper finely diced

Seasoning

  • to taste salt
  • to taste pepper

Instructions

  1. Steam the cauliflower for 5 minutes and drain on paper towels to cool slightly.
  2. In a small food processor or blender, combine mayonnaise or Greek yogurt, cream, broth, and chipotle chile pepper, and process until smooth.
  3. In a large bowl, add the cooled cauliflower, tomatoes, cheese, and basil, then toss with the dressing.
  4. Season with salt and pepper to taste, and serve chilled or at room temperature.
