One Pot Cilantro Lime Chicken and Rice

Instructions
- Wash the chicken thighs and season with salt and lime juice.
- Rub garlic and adobo seasoning on both sides of the chicken.
- Brown the chicken in a skillet for about 3 minutes on each side and then set aside.
- Preheat the oven to 350°F.
- Wash the rice until the water runs clear and set aside.
- Sauté onions, jalapenos, cumin, paprika, and bay leaves in the same pan until soft.
- Add garlic and stir for another minute.
- Stir in the rice and then add chicken broth, lime juice, lime zest, and beans.
- Return the chicken to the pan with its juices and season with white pepper and salt.
- Bake in the oven for about 30-35 minutes until the chicken is fully cooked.
- Let it cool, then serve garnished with lime slices and cilantro.
