Ingredients

Chicken Thighs Marinate

  • ¼ cup canola oil
  • 2 ½ - 3 pound chicken thighs
  • 1 ½ teaspoon salt
  • ½ Tablespoon lime juice
  • ½ - 1 teaspoon minced garlic
  • 2 tablespoons Adobo seasoning

Chicken and Rice

  • ½ medium onion, diced
  • ½ jalapeno pepper, diced
  • 2 small bay leaves
  • 1 teaspoon cumin spice
  • 1 teaspoon paprika
  • 2-3 cloves garlic, minced
  • 2 cups uncooked long grain rice
  • 3-4 tablespoons fresh cilantro, chopped
  • 4 cups chicken broth or water
  • ½ Tablespoon lime juice
  • 1 lime, grated zest
  • 15.5 oz black beans, rinsed and drained
  • 1 teaspoon white pepper
  • to taste salt

Instructions

  1. Wash the chicken thighs and season with salt and lime juice.
  2. Rub garlic and adobo seasoning on both sides of the chicken.
  3. Brown the chicken in a skillet for about 3 minutes on each side and then set aside.
  4. Preheat the oven to 350°F.
  5. Wash the rice until the water runs clear and set aside.
  6. Sauté onions, jalapenos, cumin, paprika, and bay leaves in the same pan until soft.
  7. Add garlic and stir for another minute.
  8. Stir in the rice and then add chicken broth, lime juice, lime zest, and beans.
  9. Return the chicken to the pan with its juices and season with white pepper and salt.
  10. Bake in the oven for about 30-35 minutes until the chicken is fully cooked.
  11. Let it cool, then serve garnished with lime slices and cilantro.
