Ingredients

The chicken

  • 6 pieces Chicken Thighs
  • 2 tsp Smoked Paprika
  • 2 tsp Cilantro Flakes
  • ¾ tsp Onion Powder
  • 2 tsp Salt
  • 2 tsp Black Pepper
  • ¼ cup Lime Juice
  • 1 Tbsp Olive Oil

The rice

  • 2 Tbsp Butter
  • 2 Tbsp Minced Garlic
  • cups Basmati Rice
  • 2 tsp Lime Zest
  • ½ cup Fresh Cilantro
  • 3 cups Chicken Stock
  • ¼ cup Lime Juice

Instructions

  1. Pat the chicken thighs dry and season with smoked paprika, cilantro flakes, onion powder, salt, and black pepper. Drizzle lime juice over the chicken.
  2. Heat olive oil in a large skillet over medium-high heat and sear the chicken thighs skin side down for 5 to 6 minutes on each side until golden brown.
  3. Remove the chicken from the skillet and lower the heat to medium.
  4. Add butter and garlic to the skillet, stirring for 1 minute until fragrant.
  5. Add basmati rice, lime juice, lime zest, onion powder, salt, and black pepper, cooking for 1 minute.
  6. Stir in fresh cilantro and chicken stock, bringing to a slight boil before reducing heat to medium-low.
  7. Return the chicken thighs to the skillet skin side up, cover, and simmer for 15 minutes until the rice is cooked and liquid is absorbed.
  8. Remove from heat and let rest uncovered for 10 minutes, then drizzle with fresh lime juice before serving.
