Instructions
- Pat the chicken thighs dry and season with smoked paprika, cilantro flakes, onion powder, salt, and black pepper. Drizzle lime juice over the chicken.
- Heat olive oil in a large skillet over medium-high heat and sear the chicken thighs skin side down for 5 to 6 minutes on each side until golden brown.
- Remove the chicken from the skillet and lower the heat to medium.
- Add butter and garlic to the skillet, stirring for 1 minute until fragrant.
- Add basmati rice, lime juice, lime zest, onion powder, salt, and black pepper, cooking for 1 minute.
- Stir in fresh cilantro and chicken stock, bringing to a slight boil before reducing heat to medium-low.
- Return the chicken thighs to the skillet skin side up, cover, and simmer for 15 minutes until the rice is cooked and liquid is absorbed.
- Remove from heat and let rest uncovered for 10 minutes, then drizzle with fresh lime juice before serving.
