Ingredients

  • 3 slices bacon (cut into 1-inch pieces)

  • 1 ¼ pounds broccoli (cut into 2-inch pieces)
  • 4 cups chicken broth
  • 1 cup milk
  • ½ teaspoon salt
  • to taste pepper
  • ½ cup heavy cream
  • 1 cup cheddar cheese (freshly shredded)
  • to taste bacon (cooked, optional garnish)

Instructions

  1. Cook the bacon pieces in a large soup pot over medium heat until brown and crisp.
  2. Add olive oil and diced onion, cooking until the onion softens.
  3. Whisk in flour, cooking for 1 to 2 minutes without burning it.
  4. Add broccoli, broth, milk, salt, and pepper, bringing to a boil, then simmer for 10 minutes.
  5. Blend the soup until smooth using an immersion blender or countertop blender.
  6. Stir in heavy cream and shredded cheese, then serve warm.
