Ingredients

  • 2 medium bananas
  • 3 tbsp chia seeds
  • cup almond milk
  • 1 cup gluten free rolled oats
  • ¼ cup shredded unsweetened coconut
  • ¾ cup dairy free chocolate chips
  • ¼ cup medjool dates
  • 1 tsp vanilla extract
  • 2 tbsp almond butter
  • 1 tsp cinnamon
  • ½ tsp sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. Combine chia seeds and almond milk in a small bowl and let sit.
  3. In a blender or food processor, add the bananas, oats, coconut, dates, vanilla, almond butter, cinnamon, and salt, and blend until combined with some chunks remaining.
  4. Mix the chia seed mixture into the blended ingredients along with the chocolate chips.
  5. Line a baking sheet with parchment paper and scoop out 16 cookies onto the sheet.
  6. Bake for 16-18 minutes and then remove from the oven.
