Instructions
- Preheat the oven to 350°F.
- Combine chia seeds and almond milk in a small bowl and let sit.
- In a blender or food processor, add the bananas, oats, coconut, dates, vanilla, almond butter, cinnamon, and salt, and blend until combined with some chunks remaining.
- Mix the chia seed mixture into the blended ingredients along with the chocolate chips.
- Line a baking sheet with parchment paper and scoop out 16 cookies onto the sheet.
- Bake for 16-18 minutes and then remove from the oven.
