Ingredients

The base

  • ½ cup coconut oil
  • 15 drops stevia
  • 1 large egg, beaten
  • 1 ripe banana, mashed (5.5oz)
  • cups rolled oats
  • 1 tsp baking powder
  • ¼ tsp kosher salt

The mix-ins

  • cup chocolate chips
  • ¼ cup shredded coconut
  • ¼ cup almonds, chopped

Instructions

  1. Preheat the oven to 350°F.
  2. Line a rimmed baking sheet with a silpat mat.
  3. In a large bowl, mash the banana with a fork.
  4. Add the beaten egg, stevia, coconut oil, rolled oats, baking powder, and salt to the bowl and stir until combined.
  5. Gently fold in the shredded coconut, chopped almonds, and chocolate chips.
  6. Scoop one tablespoon of the mixture and shape it into a cookie, placing it on the baking sheet.
  7. Repeat until all the dough is used.
  8. Bake for 15 minutes or until golden brown and cooked through.
  9. Allow to cool before enjoying.
