Instructions
- Preheat the oven to 350°F.
- Line a rimmed baking sheet with a silpat mat.
- In a large bowl, mash the banana with a fork.
- Add the beaten egg, stevia, coconut oil, rolled oats, baking powder, and salt to the bowl and stir until combined.
- Gently fold in the shredded coconut, chopped almonds, and chocolate chips.
- Scoop one tablespoon of the mixture and shape it into a cookie, placing it on the baking sheet.
- Repeat until all the dough is used.
- Bake for 15 minutes or until golden brown and cooked through.
- Allow to cool before enjoying.
