Ingredients

  • 3 cups rolled oats
  • 1 cup oat flour
  • cup coconut flakes
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1 large egg
  • ½ cup nut butter
  • ¼ cup coconut oil
  • ½ cup maple syrup
  • 1 tsp vanilla
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, oat flour, coconut flakes, baking powder, salt, and cinnamon.
  3. In another bowl, whisk the egg and then stir in the nut butter, coconut oil, maple syrup, and vanilla.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Wet your hands and roll the dough into balls, then flatten them slightly on the baking sheet.
  6. Add more chocolate chips on top if desired.
  7. Bake for 14-16 minutes or until fully baked.
