Instructions
- Preheat the oven to 350°F and prepare two baking sheets with parchment paper and a light coating of coconut oil spray.
- In a medium bowl, combine all the ingredients and mix well with a wooden spoon.
- Scoop out the batter using a small ice cream scoop, roll into balls, and flatten them into cookie shapes.
- Place up to 12 cookies on each tray and bake for 18 minutes or until they pass the toothpick test.
- Enjoy the cookies immediately or after cooling.
