Ingredients

The cookies

  • 2 ½ cups oats
  • ¾ cup creamy peanut butter
  • ½ cup mashed banana
  • ¼ cup unsweetened applesauce
  • ¼ cup flaxseed meal
  • ¼ cup honey
  • ¾ teaspoon salt
  • ½ teaspoon ground cinnamon

The add-ins

  • 1 cup raisins or other add-ins (chocolate chips, craisins, chopped nuts, etc.)

Instructions

  1. Preheat the oven to 350°F and prepare baking sheets with parchment paper.
  2. In a large bowl, mix together oats, peanut butter, mashed banana (or pumpkin), applesauce, flaxseed meal, honey, salt, and cinnamon until combined.
  3. Add any desired mix-ins and stir until evenly distributed.
  4. Drop spoonfuls of dough onto the prepared baking sheets, flattening each mound into a disc about ¼-inch thick.
  5. Bake for 15-18 minutes until golden and soft, adjusting time for desired texture.
