Ingredients

The base

  • 1 large banana, mashed
  • ½ cup peanut butter
  • ½ cup honey or maple syrup
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla

The dry ingredients

  • 1 cup rolled oats
  • ½ cup whole wheat flour
  • ¼ teaspoon baking soda

The mix-ins

  • ½ cup chocolate chunks
  • to taste any other mix-ins (e.g., blueberries, white chocolate, dried fruit, or flaked coconut)

Instructions

  1. Combine the banana, peanut butter, honey, coconut oil, and vanilla using a hand mixer to make the dough.
  2. Mix in the dry ingredients and fold in the chocolate and any other mix-ins.
  3. Chill the dough for about 20 minutes.
  4. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  5. Roll the dough into 16-18 balls with wet hands to prevent sticking.
  6. Bake for 12-15 minutes, allowing them to stay round or flattening gently if desired.
