Ingredients

The filling

  • 1 tablespoon neutral oil
  • 3 cups cooked chicken, chopped or shredded
  • ½-¾ cup buffalo sauce

The tacos

  • 6 8-inch flour tortillas
  • 4 cups shredded romaine lettuce
  • ½ cup ranch dressing
  • 1 cup blue cheese crumbles
  • optional chopped fresh cilantro or parsley
  • optional celery, thinly sliced

Instructions

  1. 1. Heat a medium skillet over medium heat and add the neutral oil.
  2. 2. Add the chopped chicken to the skillet and cook undisturbed for 1 to 2 minutes until it begins to brown.
  3. 3. Stir or flip the chicken and cook for another 1 to 2 minutes until browned on the other side.
  4. 4. Pour in the buffalo sauce and stir to combine, then reduce heat to low and simmer for 30 seconds.
  5. 5. Warm the tortillas in the microwave or skillet.
  6. 6. Assemble the tacos by layering chopped romaine and buffalo chicken in each tortilla.
  7. 7. Drizzle with ranch dressing and top with blue cheese crumbles.
  8. 8. Garnish with fresh herbs and serve immediately with celery if desired.
