Instant Pot Mississippi Chicken

Ingredients

The chicken and seasoning

  • 2-3 lbs Chicken Thighs or Breasts
  • ½ cup Water or low sodium chicken broth
  • ½ jar Pepperoncinis (with juice)
  • 1 packet Au Jus or Brown Gravy Mix
  • 1 packet Ranch Dressing/Seasoning Mix
  • ½ stick Unsalted Butter

Optional rice

  • 1 ½ cups White Long Grain Rice
  • 1 ½ cups Water

Instructions

  1. Place chicken in the bottom of the Instant Pot.
  2. Add the water or broth, pepperoncinis with juice, gravy mix, ranch seasoning, and butter without stirring.
  3. Close the lid and set the steam release knob to sealing.
  4. Select the pressure cook/manual setting for 8 minutes (or 15 minutes for frozen breasts).
  5. After cooking, allow a natural release for 5 minutes, then quick release the remaining pressure.
  6. If cooking rice, set the trivet in the pot, place rinsed rice and water in a pan on the trivet, and cook as directed.
  7. Once the cooking cycle is complete, remove the pan of rice if using.
  8. Shred the chicken and mix it back into the cooking liquid.
  9. Serve over rice, potatoes, or in tortillas.
