Ingredients

The chicken

  • pounds boneless skinless chicken breasts

The seasonings

  • 1 teaspoon salt
  • 1 teaspoon Creole seasoning
  • ½ teaspoon freshly ground black pepper

The cooking ingredients

  • 3 tablespoons olive oil
  • ½ onion sliced
  • 3 plump Roma tomatoes, diced
  • 2 teaspoons minced garlic
  • 1 cup chicken broth

Instructions

  1. Pat dry the chicken breast and season it with salt, Creole seasoning, and pepper.
  2. Set the Instant Pot to 'Saute' mode and heat 2 tablespoons of olive oil.
  3. Sear the chicken on both sides for about 3 to 4 minutes each, then set aside.
  4. Add 1 tablespoon of olive oil to the pot and sauté onions, tomatoes, and garlic for about 2 minutes.
  5. Pour in the chicken broth and scrape the bottom of the pot to prevent burning.
  6. Add the chicken back into the pot along with its juices, seal the lid, and set to 'Manual' high pressure for 10 minutes.
  7. Once cooking is complete, allow the pot to naturally release pressure for 10 minutes, then open the valve to release any remaining steam.
  8. Shred the chicken in the pot or transfer it to a bowl and shred using forks or a stand mixer.
  9. If desired, mix in some of the sauce from the pot for added moisture.
