Instant Pot Shredded Chicken

Instructions
- Pat dry the chicken breast and season it with salt, Creole seasoning, and pepper.
- Set the Instant Pot to 'Saute' mode and heat 2 tablespoons of olive oil.
- Sear the chicken on both sides for about 3 to 4 minutes each, then set aside.
- Add 1 tablespoon of olive oil to the pot and sauté onions, tomatoes, and garlic for about 2 minutes.
- Pour in the chicken broth and scrape the bottom of the pot to prevent burning.
- Add the chicken back into the pot along with its juices, seal the lid, and set to 'Manual' high pressure for 10 minutes.
- Once cooking is complete, allow the pot to naturally release pressure for 10 minutes, then open the valve to release any remaining steam.
- Shred the chicken in the pot or transfer it to a bowl and shred using forks or a stand mixer.
- If desired, mix in some of the sauce from the pot for added moisture.
