Ingredients

The pasta

  • 1 package Fresh Pasta

The sauce

  • ½ batch Guiltless Alfredo Sauce (or 10oz prepared Alfredo)
  • ½ tablespoon real butter
  • ¼ cup Finely minced onion
  • ½ cup canned pumpkin
  • 2 tablespoons Chicken broth (or milk/vegetable broth for vegetarians)
  • 1 tablespoon chopped fresh sage (or 1 teaspoon dried leaves)
  • ½ tablespoon fresh thyme (or ½ teaspoon dried leaves)

Instructions

  1. Cook the pasta according to package instructions.
  2. In a separate saucepan, melt the butter over medium heat.
  3. Add the finely minced onion and sauté until soft, about a couple of minutes.
  4. Add chicken broth and herbs, and deglaze the pan to remove any bits stuck to the bottom.
  5. Whisk in the pumpkin until combined.
  6. Stir in the alfredo sauce and heat through, adjusting salt and pepper as needed.
  7. Serve the sauce over the prepared pasta and top with freshly grated Parmesan cheese and extra herbs.
