Instructions
- Heat vegetable oil in a large pan over medium-high heat.
- Add chicken, season with salt and pepper, and cook until golden brown.
- Remove chicken from the pan and add mushrooms, carrots, celery, and red bell pepper; cook until softened.
- Add garlic and ginger, cooking for 30 seconds.
- Add the noodles and cooked chicken to the pan, tossing to combine.
- In a bowl, whisk together chicken broth, hoisin sauce, soy sauce, sesame oil, and cornstarch.
- Pour the sauce into the pan and bring to a simmer until thickened.
- Sprinkle with green onions and serve.
