Healthy Chicken Noodle Stir Fry

Ingredients

  • 1 pound skinless, boneless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves garlic
  • 8-10 oz spaghetti noodles
  • 2 cups broccoli florets
  • 1 bunch scallions
  • 2 tbsp sesame seeds
  • ½ tsp ground ginger
  • 1 tbsp coconut sugar
  • ½ cup coconut aminos
  • 2 tbsp sesame oil
  • ¼ tsp crushed red pepper flakes
  • to taste salt
  • to taste black pepper

Instructions

  1. Cook the spaghetti according to package instructions.
  2. Add broccoli to the pasta about 5 minutes before it's done cooking.
  3. Drain the pasta and broccoli once cooked and set aside.
  4. In a medium bowl, whisk together ginger, garlic, coconut sugar, coconut aminos, sesame oil, and red pepper flakes.
  5. Heat a large skillet and add olive oil to coat the pan.
  6. Season the chicken with salt and pepper, then add it to the skillet and cook for about 4 minutes, flipping halfway.
  7. Add the cooked spaghetti and broccoli to the skillet along with the sauce, mixing well to coat everything.
  8. Stir in scallions and sesame seeds, adjusting salt and pepper to taste.
