Ingredients

The sauce

  • cup coconut aminos
  • 3 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 ½ teaspoons brown sugar
  • 3 cloves garlic
  • ¾ teaspoon fresh ginger

The stir fry

  • 4 cups thinly sliced or julienned vegetables
  • 4 green onions thinly sliced
  • 1 ¼ lbs. boneless skinless chicken breast
  • 6 ounces uncooked whole wheat spaghetti noodles
  • to taste toasted sesame seeds

Miscellaneous

  • to taste cooking spray

Instructions

  1. Boil water in a large pot and cook the noodles according to package directions, then drain.
  2. Prepare the sauce by whisking together coconut aminos, rice vinegar, sesame oil, brown sugar, garlic, and ginger.
  3. Heat a skillet over medium-high heat, add sesame oil, and cook the chicken until done, then set aside.
  4. In the same skillet, add more sesame oil and stir fry the vegetables until tender.
  5. Combine the cooked chicken, noodles, and sauce in the skillet, tossing to coat and heat through.
  6. Serve topped with sesame seeds.
