Kedjenou Chicken

Ingredients

The chicken

  • 1 whole chicken (4 to 5 pounds, skin on, cut into medium pieces)

The vegetables

  • 2 medium onions
  • 2 whole green onions
  • 1 whole red or green pepper
  • 4 whole tomatoes

The seasonings

  • 1 tablespoon ginger paste
  • 1 tablespoon garlic puree
  • 1 sprig fresh thyme
  • 1 leaf bay leaf
  • 1 teaspoon smoked paprika
  • ½ tablespoon chicken bouillon (or more, optional)
  • 1 whole habanero pepper (optional)
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Trim excess fat from the chicken and pat it dry, then season with salt.
  3. Combine garlic, ginger, thyme, paprika, green onions, chicken bouillon, and onions with the chicken.
  4. Marinate the chicken for at least 2 hours or preferably overnight in the fridge.
  5. Slice the tomatoes, onion, green onions, and green pepper.
  6. Combine all ingredients in a Dutch oven or oven-safe pot and stir well.
  7. Cover the pot with its lid and place it in the oven.
  8. Shake the pot once or twice during cooking without opening it.
  9. Bake for about 1 hour until the chicken is tender.
