The base

  • 1 batch Ginger Spice Cookie Dough

Toppings

  • 1 scoop Pumpkin Ice Cream
  • to taste Buttermilk Caramel Syrup
  • to taste Candied or toasted pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly spray ramekins with non-stick spray.
  3. Fill each ramekin halfway with Ginger Spice Cookie Dough and press down to flatten.
  4. Bake for 15-20 minutes, then check for doneness; the tops should be puffed and set, and the edges slightly crackled.
  5. Remove from the oven and let cool until slightly warm.
  6. Top each pizookie with a generous scoop of pumpkin ice cream.
  7. Drizzle with buttermilk caramel syrup and sprinkle with candied nuts.
