Pumpkin Cookie Dough Pops

semi-sweet chocolate chips (divided)

Instructions
- 1. Beat the butter and sugars in a large bowl until light and fluffy.
- 2. Add milk, pumpkin butter, and vanilla, mixing until well combined.
- 3. Incorporate flour, baking soda, salt, and pumpkin pie spice, mixing until just combined.
- 4. Stir in one-third of the chocolate chips and chill the dough for an hour.
- 5. Form the dough into 1-inch balls around popsicle sticks and arrange on a lined baking sheet.
- 6. Freeze the dough balls for 30 minutes.
- 7. Melt the remaining chocolate chips with coconut oil over a double boiler or in the microwave.
- 8. Dip the chilled dough balls in the melted chocolate, coating them thoroughly.
- 9. Tap off excess chocolate and return to the lined baking sheet.
- 10. Chill in the fridge until the chocolate is set.
