Ingredients

The dough

  • 1 ¼ cups all-purpose flour
  • ½ tsp salt
  • ¼ tsp baking soda
  • 1 stick butter (softened)
  • scant cup granulated sugar
  • cup packed brown sugar
  • ½ tsp vanilla
  • 2 Tbsp milk (any kind)
  • ¼ cup pumpkin butter
  • 1 ½ tsp pumpkin pie spice
  • 1 ½ cups semi-sweet chocolate chips (divided)

For coating

  • 1 tsp coconut oil (optional)

Instructions

  1. 1. Beat the butter and sugars in a large bowl until light and fluffy.
  2. 2. Add milk, pumpkin butter, and vanilla, mixing until well combined.
  3. 3. Incorporate flour, baking soda, salt, and pumpkin pie spice, mixing until just combined.
  4. 4. Stir in one-third of the chocolate chips and chill the dough for an hour.
  5. 5. Form the dough into 1-inch balls around popsicle sticks and arrange on a lined baking sheet.
  6. 6. Freeze the dough balls for 30 minutes.
  7. 7. Melt the remaining chocolate chips with coconut oil over a double boiler or in the microwave.
  8. 8. Dip the chilled dough balls in the melted chocolate, coating them thoroughly.
  9. 9. Tap off excess chocolate and return to the lined baking sheet.
  10. 10. Chill in the fridge until the chocolate is set.
