Ingredients

The cookie dough

  • ¼ cup coconut flour
  • ¼ cup arrowroot powder
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup salted butter, cold, cut into 12 pieces
  • ¼ cup canned pumpkin puree
  • ¼ cup honey

The mix-ins

  • ½ cup chocolate chips

Instructions

  1. Combine the coconut flour, arrowroot powder, pumpkin pie spice, salt, and baking soda in a food processor.
  2. Pulse in the cold butter, pumpkin puree, and honey until a dough forms.
  3. Remove the blade from the food processor and stir in the chocolate chips by hand.
  4. Scoop one level tablespoon of dough onto a parchment-lined baking sheet and press down firmly.
  5. Bake in a preheated oven at 350°F for 10-15 minutes.
  6. Allow cookies to cool on the baking sheet for 1 hour before serving.
