Instructions
- Combine the coconut flour, arrowroot powder, pumpkin pie spice, salt, and baking soda in a food processor.
- Pulse in the cold butter, pumpkin puree, and honey until a dough forms.
- Remove the blade from the food processor and stir in the chocolate chips by hand.
- Scoop one level tablespoon of dough onto a parchment-lined baking sheet and press down firmly.
- Bake in a preheated oven at 350°F for 10-15 minutes.
- Allow cookies to cool on the baking sheet for 1 hour before serving.
