Ingredients

The Cookie Base

  • 6 ounces unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup dark brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • ¾ teaspoon baking soda
  • 1 teaspoon baking powder

The Pumpkin Flavor

  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin spice
  • ¼ teaspoon cinnamon spice
  • cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (176°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Stir in the egg, vanilla extract, and pumpkin puree until well combined.
  4. Add the flour, salt, baking soda, baking powder, pumpkin spice, and cinnamon, and mix until incorporated.
  5. Fold in the chocolate chips and let the dough rest in the fridge for about 15 minutes.
  6. Scoop about 1.5 tablespoons of cookie dough onto the prepared baking sheet, leaving space between each scoop.
  7. Bake for 10-12 minutes until the edges are golden brown, then cool on the baking sheet before serving.
