Instructions
- Preheat the oven to 350°F (176°C) and line a baking sheet with parchment paper.
- In a bowl, mix the butter, brown sugar, and granulated sugar until light and fluffy.
- Stir in the egg, vanilla extract, and pumpkin puree until well combined.
- Add the flour, salt, baking soda, baking powder, pumpkin spice, and cinnamon, and mix until incorporated.
- Fold in the chocolate chips and let the dough rest in the fridge for about 15 minutes.
- Scoop about 1.5 tablespoons of cookie dough onto the prepared baking sheet, leaving space between each scoop.
- Bake for 10-12 minutes until the edges are golden brown, then cool on the baking sheet before serving.
