Ingredients

  • ½ cup unsalted butter, melted & slightly cooled
  • ¼ cup packed light or dark brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 6 Tablespoons pumpkin puree
  • cups all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Whisk melted butter, brown sugar, and granulated sugar in a medium bowl until smooth, then mix in vanilla and pumpkin.
  2. In a large bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and pumpkin pie spice.
  3. Combine wet and dry ingredients, mixing until a soft dough forms, then fold in chocolate chips.
  4. Cover the dough and chill for at least 30 minutes.
  5. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  6. Scoop dough into balls and flatten slightly before placing on the baking sheets.
  7. Bake for 11-12 minutes until edges are set but centers are soft.
  8. Cool on baking sheets for 10 minutes before transferring to a wire rack to cool completely.
