Ingredients

Pumpkin Spice

  • 1 Tbsp. ground cinnamon
  • tsp. ground ginger
  • 1 tsp. ground nutmeg
  • ¾ tsp. ground cloves

Cookies and assembly

  • 3 cups all-purpose flour
  • tsp. baking soda
  • 1 tsp. Diamond Crystal kosher salt
  • ½ tsp. Morton kosher salt
  • cups unsalted butter, softened
  • cups light brown sugar
  • 1 cup granulated sugar
  • 3 large eggs
  • ¼ cup canned pumpkin purée
  • 1 Tbsp. vanilla bean paste or vanilla extract
  • 4 oz. semisweet chocolate, coarsely chopped
  • cups bittersweet or semisweet chocolate chips
  • cups coarsely chopped pecans

Instructions

  1. Mix the pumpkin spice ingredients in a small bowl.
  2. Preheat the oven to 350°F and prepare baking sheets with parchment paper.
  3. Combine flour, baking soda, salt, and pumpkin spice in a bowl.
  4. In a mixer, beat butter, brown sugar, and granulated sugar until fluffy, then add eggs one at a time, followed by pumpkin and vanilla.
  5. Gradually mix in the dry ingredients and fold in the chocolate and nuts.
  6. Drop dough onto baking sheets and press reserved chocolate and nuts on top.
  7. Bake until golden brown, then cool on the sheets before transferring to wire racks.
