  • 3 medium farmers' market carrots
  • ½ of a serrano pepper
  • cup extra virgin olive oil
  • ½ teaspoon fine grain sea salt
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon miso (optional)
  • 1 tablespoon maple syrup
  • ¼ cup brown rice vinegar
  • 4 small shallots, peeled

Instructions

  1. Blend all ingredients until very smooth.
  2. Taste and adjust seasoning with more salt or vinegar if needed.
