Ingredients

  • 1 cup pumpkin puree
  • 4 large eggs
  • cup coconut sugar
  • 3 tablespoons liquified coconut oil or ghee
  • ¼ teaspoon vanilla liquid stevia
  • ½ teaspoon sea salt
  • 2 teaspoons cinnamon
  • 2 teaspoons pumpkin pie spice
  • ¼ cup arrowroot flour
  • ½ cup coconut flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ cup chopped walnuts
  • ½ cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine pumpkin puree, eggs, coconut sugar, liquified coconut oil or ghee, vanilla liquid stevia, sea salt, cinnamon, pumpkin pie spice, arrowroot flour, coconut flour, baking soda, and baking powder.
  3. Beat the mixture with an electric mixer until well combined.
  4. Line the bottom of a loaf pan with parchment paper and grease the sides.
  5. Pour the batter into the prepared loaf pan.
  6. If using, fold in chopped walnuts and raisins.
  7. Bake in the preheated oven for about 50 minutes or until a toothpick comes out clean.
