Beer-Battered Tofu Tacos with Mango Salsa

Ingredients

Mango Salsa

  • 1 piece ripe mango, finely diced
  • 1 piece red bell pepper, finely diced
  • 1 piece jalapeno pepper, seeded and minced
  • ¼ cup chopped fresh cilantro
  • 2 pieces scallions, chopped
  • 2 tablespoons lime juice
  • 1 teaspoon maple syrup or agave syrup
  • to taste salt and pepper

Beer-Battered Tofu

  • 1 pound extra-firm tofu, drained and pressed
  • 1 cup all-purpose flour
  • 1 cup ale
  • ½ teaspoon salt
  • ¼ to ⅓ cup canola oil or another neutral flavor high heat vegetable oil

For Serving

  • 4 to 6 pieces 8-inch flour tortillas
  • 1 piece avocado, sliced

Instructions

  1. Prepare the mango salsa by combining all the salsa ingredients in a medium bowl and set aside.
  2. Slice the tofu into 4 slabs, then cut each slab into 4 thin strips to get 16 strips.
  3. Whisk together the flour, ale, and salt in a medium bowl.
  4. Heat oil in a large skillet over medium-high heat, ensuring it's at least ⅛-inch deep.
  5. Dip tofu strips into the batter to coat and place them in the skillet, cooking in batches if necessary.
  6. Cook the tofu for about 2 minutes on each side until browned and crispy, then transfer to a paper towel-lined plate.
  7. Assemble the tacos by placing 3 or 4 tofu strips in each tortilla and topping with avocado slices and mango salsa.
