Ingredients

Cookie Base

  • 1 ¾ cups almond flour
  • cup cocoa powder
  • ½ tsp salt
  • ¼ cup coconut oil
  • ¼ cup maple syrup
  • ½ tsp peppermint extract

Chocolate Coating

  • 1 ½ cups dark chocolate chips
  • 1 tbsp melted coconut oil
  • ½ tsp peppermint extract
  • ¼ cup maple syrup

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the almond flour, cocoa powder, and salt.
  3. Add the coconut oil, maple syrup, and peppermint extract; mix until well combined.
  4. Chill the dough in the fridge for 30 minutes.
  5. Roll the dough out between two sheets of parchment or wax paper until ¼ inch thick.
  6. Use a mason jar lid, shot glass, or Linzer cookie cutter to cut out circles and place them on the baking sheet.
  7. Continue this process until all dough is used.
  8. Bake the cookies for 12 minutes and let them cool completely.
  9. While the cookies cool, melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second increments until melted, then add peppermint extract.
  10. Lay the cookies on a cooling rack over the baking sheet and pour the chocolate over them, or dip each cookie in chocolate to coat.
  11. Let the cookies cool either on the counter or in the fridge.
