Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix the almond flour, cocoa powder, and salt.
- Add the coconut oil, maple syrup, and peppermint extract; mix until well combined.
- Chill the dough in the fridge for 30 minutes.
- Roll the dough out between two sheets of parchment or wax paper until ¼ inch thick.
- Use a mason jar lid, shot glass, or Linzer cookie cutter to cut out circles and place them on the baking sheet.
- Continue this process until all dough is used.
- Bake the cookies for 12 minutes and let them cool completely.
- While the cookies cool, melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second increments until melted, then add peppermint extract.
- Lay the cookies on a cooling rack over the baking sheet and pour the chocolate over them, or dip each cookie in chocolate to coat.
- Let the cookies cool either on the counter or in the fridge.
