Ingredients

  • cup Wholesome Allulose Zero Calorie Granulated Sweetener
  • 1 cup chocolate chips
  • ¼ cup coconut oil
  • tsp peppermint extract
  • cups finely ground almond flour
  • ¼ cup cocoa powder
  • 2 Tbsp cocoa powder
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs

Instructions

  1. Preheat the oven to 350℉ and line two baking sheets with parchment paper.
  2. Melt chocolate chips and coconut oil in a saucepan over medium-low heat, then stir in peppermint extract.
  3. Mix almond flour, Allulose sweetener, cocoa powder, baking powder, and salt in a bowl.
  4. Add the melted chocolate and eggs to the dry ingredients and mix well, then fold in the remaining chocolate chips.
  5. Scoop the dough into balls and place them on the baking sheets, pressing them slightly to form cookies.
  6. Bake for 11-13 minutes, rotating the pans halfway through, then cool on the baking sheets for 10 minutes before transferring to a wire rack.
