Instructions
- Preheat the oven to 350℉ and line two baking sheets with parchment paper.
- Melt chocolate chips and coconut oil in a saucepan over medium-low heat, then stir in peppermint extract.
- Mix almond flour, Allulose sweetener, cocoa powder, baking powder, and salt in a bowl.
- Add the melted chocolate and eggs to the dry ingredients and mix well, then fold in the remaining chocolate chips.
- Scoop the dough into balls and place them on the baking sheets, pressing them slightly to form cookies.
- Bake for 11-13 minutes, rotating the pans halfway through, then cool on the baking sheets for 10 minutes before transferring to a wire rack.
