Ingredients

The cookie dough

  • ¼ cup nut butter
  • ¼ cup coconut oil, melted
  • ¼ cup coconut sugar
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 large egg
  • ¾ tsp peppermint extract
  • 1 cup almond flour
  • cup coconut flour
  • cup cocoa powder
  • ¼ tsp salt
  • ½ tsp baking soda
  • ½ cup chocolate chips

Optional toppings

  • ½ cup melted chocolate
  • ½ cup crushed candy canes

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the almond butter, coconut oil, coconut sugar, and maple syrup.
  3. Whisk in the egg, followed by the vanilla and peppermint extracts.
  4. In a large bowl, combine the almond flour, coconut flour, cocoa powder, salt, and baking soda.
  5. Add the wet ingredients to the dry ingredients and stir to combine.
  6. Let the dough sit for 15 minutes to allow the flours to absorb the liquid.
  7. Roll the dough into balls and flatten them on the baking sheet.
  8. Add chocolate chips on top of each cookie.
  9. Bake for 9-11 minutes or until the cookies are slightly firm to the touch.
  10. Let the cookies cool completely.
  11. Melt the chocolate and dip one half of each cookie into the chocolate, then into the crushed candy canes.
  12. Let the cookies set and store at room temperature for up to one week.
