Ingredients

The cookies

  • 1 ½ cups almond flour
  • cup cocoa powder, unsweetened
  • ½ cup coconut sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 2 tablespoons coconut oil, melted
  • ½ teaspoon peppermint extract

The mint chocolate coating

  • 1 ½ cups chocolate chips
  • 1 tablespoon coconut oil
  • 1 teaspoon peppermint extract

Instructions

  1. Preheat the oven to 325°F and prepare two baking sheets with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, coconut sugar, baking soda, and salt.
  3. Add the egg, melted coconut oil, and peppermint extract to the dry ingredients and mix until a dough forms.
  4. Refrigerate the dough for 15-30 minutes.
  5. Roll out the dough between two pieces of parchment paper to about ¼ inch thick.
  6. Cut out cookies using a round cookie cutter or a glass and place them on the baking sheet.
  7. Bake for 18-20 minutes until firm, then let cool completely.
  8. For the chocolate coating, melt chocolate chips and coconut oil in the microwave, stirring until smooth.
  9. Stir in peppermint extract and dip each cookie into the melted chocolate.
  10. Return the cookies to the baking sheet and refrigerate for 10-15 minutes to set.
