Paleo Thin Mint Fudge Cookies

Instructions
- Preheat the oven to 325°F and prepare two baking sheets with parchment paper.
- In a mixing bowl, combine almond flour, cocoa powder, coconut sugar, baking soda, and salt.
- Add the egg, melted coconut oil, and peppermint extract to the dry ingredients and mix until a dough forms.
- Refrigerate the dough for 15-30 minutes.
- Roll out the dough between two pieces of parchment paper to about ¼ inch thick.
- Cut out cookies using a round cookie cutter or a glass and place them on the baking sheet.
- Bake for 18-20 minutes until firm, then let cool completely.
- For the chocolate coating, melt chocolate chips and coconut oil in the microwave, stirring until smooth.
- Stir in peppermint extract and dip each cookie into the melted chocolate.
- Return the cookies to the baking sheet and refrigerate for 10-15 minutes to set.
