Paleo Double Chocolate Fudge Cookies

Ingredients

  • 1 ½ cups almond flour
  • ¼ cup tapioca starch
  • ¼ cup cacao powder
  • ¼ cup coconut sugar
  • ½ tsp baking soda
  • pinch sea salt
  • 2 eggs
  • ½ cup cashew butter
  • ¼ cup melted coconut oil
  • 2 tbsp honey
  • 1 tbsp organic vanilla extract
  • cup dairy and soy free chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Combine all ingredients except the chocolate chips in a mixer and blend on low until smooth.
  3. Stir in the chocolate chips by hand.
  4. Line two baking sheets with parchment paper.
  5. Form the dough into 1.5-inch balls and place them on the baking sheets, wetting your hands every few cookies if needed.
  6. Bake in the oven for 8-9 minutes until the bottoms are golden.
  7. Remove from the oven and let cool for a few minutes before serving.
