Paleo Chocolate Chip Cookies

Ingredients

The cookie dough

  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 cup almond butter
  • ¾ cup coconut sugar
  • ½ cup tapioca starch
  • 2 large eggs
  • 1 ½ teaspoon pure vanilla extract

The chocolate

  • cup chocolate chips or chunks
  • to taste flaky sea salt

Instructions

  1. Preheat the oven to 325º F and line two baking sheets with parchment paper.
  2. In a bowl, whisk together almond butter, tapioca starch, eggs, coconut sugar, baking soda, vanilla, and kosher salt.
  3. Fold in the chocolate chips.
  4. Drop dollops of batter (about 2 tablespoons each) onto the baking sheets, spacing them about an inch and a half apart.
  5. Press down each cookie slightly to flatten them.
  6. Sprinkle with flaky sea salt if desired.
  7. Bake for 10-11 minutes until the edges start to crisp.
  8. Let the cookies cool on the baking sheet for at least 5 minutes before removing.
