Paleo Chocolate Chip Cookies

Instructions
- Preheat the oven to 325º F and line two baking sheets with parchment paper.
- In a bowl, whisk together almond butter, tapioca starch, eggs, coconut sugar, baking soda, vanilla, and kosher salt.
- Fold in the chocolate chips.
- Drop dollops of batter (about 2 tablespoons each) onto the baking sheets, spacing them about an inch and a half apart.
- Press down each cookie slightly to flatten them.
- Sprinkle with flaky sea salt if desired.
- Bake for 10-11 minutes until the edges start to crisp.
- Let the cookies cool on the baking sheet for at least 5 minutes before removing.
