Ingredients

The cookie dough

  • 1 cup almond flour
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 1 large egg
  • cup coconut sugar
  • cup tahini
  • ¼ cup coconut oil, melted and cooled
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Topping

  • to taste sea salt for sprinkling

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the almond flour, baking soda, and sea salt.
  3. In a large bowl, whisk together the egg and coconut sugar.
  4. Mix in the tahini, coconut oil, and vanilla extract.
  5. Add the dry ingredients to the wet ingredients and stir until well combined.
  6. Fold in the chocolate chips.
  7. Optionally, refrigerate the dough for 30 minutes to prevent spreading.
  8. Roll the dough into balls and place them on the baking sheet.
  9. Bake for 12-15 minutes or until slightly golden brown, then sprinkle with sea salt.
